Delicious Chocolate
There's a quiet thrill in serving a chocolate dessert that no one's tasted before. You see it in the raised eyebrows, the pause after the first bite, the smile spreading across their face.
Chocolate's complex, slightly bitter sweetness is the perfect backdrop for unexpected flavors. Below are three recipes that go beyond the ordinary but are simple enough to try at home.

1. Dark Chocolate & Chili Brownies

A gentle kick of spice turns classic brownies into a conversation piece.
Ingredients (serves 8):
• 150 g unsalted butter
• 200 g dark chocolate (70% cocoa), chopped
• 150 g brown sugar
• 3 large eggs
• 80 g plain flour
• 2 tbsp cocoa powder
• ½ tsp chili powder (adjust to taste)
• Pinch of salt
Steps:
1. Preheat oven to 180°C. Line a 20×20 cm baking tin with parchment.
2. Melt butter and chocolate together in a heatproof bowl over simmering water. Stir until smooth and let cool slightly.
3. Whisk sugar and eggs in a separate bowl until light and thick.
4. Fold in the melted chocolate mixture.
5. Sift flour, cocoa, chili powder, and salt over the batter. Fold gently until combined.
6. Pour into the tin and bake for 22–25 minutes until the top is set but the center is still a little fudgy.
7. Cool in the tin before slicing.

2. Basil-Infused Chocolate Mousse

Herbs give chocolate a fresh edge; basil's peppery note works surprisingly well.
Ingredients (serves 4):
• 200 g dark chocolate, chopped
• 300 ml double cream
• 1 handful fresh basil leaves
• 2 tbsp sugar
• 2 egg whites
Steps:
1. Heat 150 ml cream in a small saucepan with basil and sugar. Bring just to a simmer, turn off heat, cover, and let infuse 15 minutes. Strain out basil leaves.
2. Pour the warm infused cream over the chopped chocolate. Stir until melted and glossy.
3. Whip the remaining 150 ml cream to soft peaks.
4. Beat egg whites until stiff peaks form.
5. Gently fold whipped cream into the chocolate mixture, then fold in egg whites in two additions.
6. Spoon into glasses and chill at least 2 hours before serving. Garnish with a tiny basil leaf or a few shaved chocolate curls.

3. Roasted Pineapple & Milk Chocolate Bark

A tropical twist that's crunchy, tangy, and sweet all at once.
Ingredients (makes about 12 pieces):
• 250 g milk chocolate, chopped
• 150 g fresh pineapple, diced small
• 2 tbsp honey
• 30 g toasted pumpkin seeds
Steps:
1. Preheat oven to 200°C. Line a tray with baking paper.
2. Toss pineapple with honey and spread on the tray. Roast for 15 minutes, stirring once, until golden and caramelized. Cool completely.
3. Melt milk chocolate gently in a heatproof bowl over simmering water or in 30-second bursts in a microwave, stirring each time.
4. Spread melted chocolate about ½ cm thick on a sheet of baking paper.
5. Sprinkle roasted pineapple evenly over the chocolate, then scatter with toasted pumpkin seeds.
6. Chill in the fridge for 30 minutes until set. Break into pieces to serve.
